Life is good. I wasn't sure I wanted to continue doing this blog. I feel too boring. But, I find its therapeutic for me to talk about my passion for exercise and food.
I've realized how much I absolutely love veggies in the past few months. I have become an addict. Broccoli, asparagus, eggplant, zucchini, mushrooms (are those a veggie?), corn, beans, peas, cauliflower, onions, carrots, sprouts, green and red peppers, cucumbers, tomatoes, spaghetti squash, spinach, potatoes (how I love thee, Idaho), avacado (probably not considered a veggie to others), celery...ah, the list goes on forever. I do hate beets. My fridge was full to the max last Friday with tons of veggies and I have eaten them all. I must go shopping, again.
Today's lunch was delish....homemade healthy Primavera.
Sauted onion, garlic & mushrooms in 1 TBSP olive oil. Added green peppers, asparagus, zucchini, broccoli, green peppers, tomatoes & peas until they had cooked through. Then I added cooked whole wheat pasta. Put that deliciousness into a bowl and put 1/2 TBSP of parmesan cheese on top. YUMMMM! I was satisfied, and my tummy was full and it felt oh-so-good. Lotsa fiber, don'tchya know!!
Tomorrow I start my Turbo Kick classes, and I am very much excited!
